Grilled Peaches with Whipped Feta, Mint & Toasted Pine Nuts

Ingredients

For the Whipped Feta

  • 8 oz feta cheese

  • ½ cup whole-milk Greek yogurt

  • 2 Tbsp extra-virgin olive oil

  • Zest of 1 lemon

  • 1 Tbsp fresh lemon juice

  • Freshly ground black pepper

For the Peaches

  • 4 ripe but firm peaches

  • 1 Tbsp olive oil

  • â…“ cup toasted pine nuts

  • ¼ cup fresh mint leaves, torn

  • ½ tsp Aleppo pepper, plus more to taste

  • 1 Tbsp honey

  • Flaky salt

  • Extra-virgin olive oil, for finishing

Instructions

1. Heat the grill.
Preheat the grill to medium-high heat.

2. Make the whipped feta.
Add the feta, Greek yogurt, olive oil, lemon zest, lemon juice and black pepper to a food processor. Blend until smooth and creamy. Transfer to the refrigerator while you prepare the peaches.

3. Prep the peaches.
Cut the peaches into wedges and lightly coat with olive oil.

4. Grill the peaches.
Place the peaches directly on the grill and cook for 1–2 minutes per side, until lightly caramelized and warmed through. You want them to hold their shape.

5. Toast the Pine Nuts
Add the pine nuts to a dry skillet over medium-low heat. Cook, stirring frequently, until lightly golden and fragrant.

6. Build the platter.
Spread the whipped feta over a serving platter. Arrange the warm peaches over the feta.

7. Finish.
Scatter the toasted pine nuts, mint and Aleppo pepper over the peaches. Drizzle lightly with honey and olive oil and finish with flaky salt.

8. Serve.
Serve while the peaches are still slightly warm against the cool whipped feta.
