Rosemary Garlic Focaccia

Prep Time: 3 hours (mostly dough resting time)
Cook Time: 25 minutes
Total Time: 3.5 hours
Serves: 4

Ingredients

  • 3 cups bread flour

  • 1 ½ cups warm water (90-105F)

  • 2 ¼ tsp active dry yeast

  • 1 tsp honey

  • 1 ½ tsp salt

  • ¼ cup olive oil, divided

  • 2 garlic cloves, roasted

  • 1 sprig rosemary, chopped

  • 2 tbsp olive oil

  • Flakey sea salt

Instructions

1. Prep dough
In a large bowl, combine flour, water, yeast, honey, salt, and half of olive oil. Mix and cover, allow to sit for 15 minutes

2. Stretch + Fold
Stretch and fold dough in on itself, then allow to sit for 15 more minutes. Stretch and fold once more, then allow to sit for 1 hour.

3. Portion + Final Rest
After one hour, portion dough onto pan along with the remaining olive oil. Envelope fold the dough (fold into thirds), then allow to rest 30-45 minutes

4. Prep Oven
Preheat oven to 425F

5. Add aromatics
Chop roasted garlic and rosemary, add into small bowl along with 2 tbsp olive oil. Stretch dough along surface of pan, dimple, and pour garlic rosemary mixture over. Sprinkle with flaky sea salt.

6. Bake + Serve
Bake for 20-25 minutes, or until golden. Remove from pan once cooled and serve!
