Pasta Salad with Lemon & Veggies
Serves 2-4 for a snack


Ingredients
8 oz pasta (rotini or penne)
1 cup chopped vegetables of choice, cucumbers, peas, cherry tomatoes, and bell peppers
¼ cup olive oil
1 tablespoon lemon juice
Salt and pepper
Crumbled feta (optional)

Instructions

  1. Cook pasta, then rinse with cold water and drain.

  2. In a large bowl, combine pasta, veggies, oil, lemon juice, salt, and pepper

  3. Mix well, chill, and serve cold.
