Lemon Garlic Chicken

Lemon Chicken; Dinner

Lemon Garlic Chicken Crispy, golden and bright — this is the kind of weeknight dinner that feels a little special without any fuss.

Ingredients

For the chicken:

  • 4 chicken breasts, pounded thin

  • 1 cup flour

  • ½ cup grated parmesan

  • Zest of 1 lemon

  • 1 tsp salt

  • ½ tsp garlic powder

  • Olive oil for frying

For the pan sauce:

  • 4 cloves fresh garlic, thinly sliced

  • Juice of 2 lemons

  • 1 lemon, sliced into rounds

  • 2 tbsp capers

  • Salt to taste

Instructions

  1. Mix flour, parmesan, lemon zest, salt and garlic powder in a shallow dish.

  2. Dredge each chicken breast in the flour mixture, pressing to coat well. Shake off any excess.

  3. Heat a generous pour of olive oil in a large pan over medium-high heat.

  4. Cook chicken 3–4 minutes per side until deep golden and cooked through. Work in batches — don't crowd the pan. Set aside.

  5. In the same pan, reduce heat to medium and add the sliced garlic. Cook 1 minute until just golden.

  6. Add lemon juice, lemon slices and capers. Let it bubble for 2 minutes, scraping up any bits from the bottom of the pan.

  7. Return chicken to the pan, spoon the sauce over the top and serve immediately.

Notes Pounding the chicken thin is the secret — it cooks evenly and gets a much better crust. A meat mallet or the bottom of a heavy pan both work fine.
