Halloumi andVegetable Skewers

Grilled Halloumi and Vegetable Skewers (8 Servings)
These are great as they can be cooked off and served room temp, saving you from standing around the grill all night!

Ingredients:

2 blocks halloumi cheese (about 16 oz), cut into 1-inch cubes
2 zucchinis, sliced into thick rounds
2 red bell peppers, cut into 1.5-inch pieces
1 red onion, cut into chunks
1 pint cherry tomatoes
¼ cup olive oil
2 tablespoons lemon juice
2 teaspoons dried oregano
Salt and freshly ground black pepper
Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions:

  1. In a large bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.

  2. Add halloumi cubes and vegetables to the bowl and gently toss to coat. Let marinate for 15–30 minutes.

  3. Preheat grill to medium-high heat.

  4. Thread skewers, alternating halloumi and vegetables.

  5. Grill skewers for about 2–3 minutes per side, turning occasionally, until vegetables are slightly charred and halloumi is golden and crisp on the edges.

  6. Serve warm with salsa verde
