Chipotle Honey Grilled Chicken with Lime Crema

Serves 6

Ingredients:

For the Chicken Marinade:

2 lbs boneless, skinless chicken thighs
2 chipotle peppers in adobo sauce, finely chopped
2 tbsp adobo sauce (from the can)
2 tbsp honey
2 tbsp olive oil
2 cloves garlic, minced
1 tsp cumin
Juice of 1 lime
Salt and pepper to taste

For Serving:
Lime wedges
Chopped cilantro

Lime Crema:
½ cup sour cream
Zest and juice of 1 lime
Salt to taste

Instructions:

  1. In a bowl, mix chipotle peppers, adobo sauce, honey, olive oil, garlic, cumin, lime juice, salt, and pepper. Toss chicken to coat. Marinate at least 30 minutes (or up to 8 hours).

  2. Stir together sour cream, lime zest and juice, and a pinch of salt. Chill until ready to serve.

  3. Grill over medium-high heat, turning occasionally, until cooked through and charred in spots — about 10–12 minutes.

  4. Drizzle or serve with lime crema, top with cilantro, and add lime wedges on the side.
